Summer Appetizers

It seems like summer is a time that we have guests over quite a bit for a bbq or just to get together. So I thought it would be nice to share some yummy summer appetizers!

Black Bean Corn Dip
(I always keep all these ingredients in my pantry - just incase I need to throw them all together!)

Ingredients:
  •  1 can of diced tomatoes (get the can with peppers for some extra spice)
  • 1 can of black beans (drained/rinsed)
  • 1 can of mexican corn
  • bunch of green onions
  • bunch of cilantro
and TA DA mix it all together - add more of what you like (ex- cilantro) or you can always add other veggies you like (red peppers, a little bit of minced garlic.. be creative!!)

Lori's Dip
This recipe is from my mother's friend. It is absolutley delish! Don't let the ingredients fool you. It really is not that spicy (i'm not a huge "spicy" lover - but this dip is so yummy)

Ingredients:
  •  1 8 oz. cream cheese
  • 1/2 cup of mayo
  • 1 chopped jalenpeno (chop it alot!)
  • Minced garlic (as much or little as you like)
Make sure the cream cheese is at room temperature (it's easier to mix) mix them all and heat it up in the  microwave. Serve with tortilla chip or crackers! I know you will love it.


Watermelon Salsa

This is one of my favorite summer things to have in the fridge! It is sweet and spicy and sooo good!

Ingredients:
  •  3 cups of finely diced seedless watermelon (let it drain for a couple mins)
  • 2 jalapeno peppers -seeded and minced.
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup minced red onion
  • Juice of two limes
  • salt
Combine all ingredients except salt before serving add 1/4 tsp salt.

Buffalo Chicken Dip
This is my "go to" appetizer :) 
Ingredients:
  • 8 oz. Cream cheese
  • 1 cup of ranch or blue cheese!
  • 1 couple of finely shredded cheddar cheese
  • 2 12.5 oz. of chicken
  • 1/4 cup of hot sauce (I used Louisiana Hot Sauce)
  • 1/2 cup Sour Cream
Mix all ingredients (I just put them all in my small crockpot) or just warm it up and serve with chips or crackers!! :)

Hot Artichoke Spinach Dip
Ingredients:
  • 1 Cup of chopped artichoke hearts
  • 1/2 c - 1 cup frozed chopped spinach thawed and drained
  • 8 oz. cream cheese
  • 1/2 c. parmesan cheese
  • 1/2 tsp. crushed red pepper
  • 1/4 tsp. salt
  • 1/8 tsp garlic powder
  • dash of pepper
Combine and heat up - served with chips, crackers or bread!

Shrimp Dip
Ingredients:
  • 2 cups sharp shredded cheddar
  • 1 cup mayo
  • dash of Worcestershire
  • garlic salt (to taste)
  • 6 chopped green onions
  • 2 small can of tiny shrimp - drained
Combined and serve warm or cooled!

Chicken and Cheese Dip
Ingredients:

  • 8 oz. Cream Cheese
  • 20 oz. chopped chicken (4 breasts)
  • 1 onion - diced
  • 1 bell pepper - diced
  • 1 can cream of chicken soup
  • 4 oz. pepper jack cheese
  • 1 clove garlic
  • 3/4 c. velveeta
  • 8 oz. sour cream
  • 4 oz. jal. peppers
Microwave 3 minutes and stir. Continue microwaving 3 minutes and stir until thick and creamy.
Put in crockpot to keep warm. Serve with tortilla chips.
