Homemade LOVE


For Valentine's Day I made a new casserole that turned out so yummy! It came from Taste of Home Annual Recipes, I got the book from my bridal shower and it is full of delicious recipes.

 Cowboy Casserole

Ingredients:
  • 1 can of corn
  • 1 lb. of ground beef
  • 2/3 cup condensed cream of chicken soup (I used a whole can)
  • 1/2 cup shredded cheddar cheese
  • 
  • 1/3 cup of milk

  • 2-3 tablespoons of sour cream (I like my sour cream..)
  • 3/4 tsp. onion powder (I just garlic salt 'cause it's what I had)
  • Pepper to taste
  • 2 cups frozen tater tots
1. Cook beef until no longer pink.
2. Stir in corn, soup, 1/4 cup of cheese, milk, sour cream, onion powder and pepper.
3. Place 1 cup tater tots in a 3 cup baking dish coating with cooking spray.
4. Layer with beef mixture and then remaining tator tots on top, cover with the rest of the cheddar cheese.
5. Bake, uncovered at 375 for 20-25 minutes until bubbly.

This casserole will definitely be staple in our house. We also love to have tator tot casserole, and cowboy casserole is very similiar!

I cooked this for Valentine's Day and it was soooo good!


I also whipped up a super easy and healthy desert. The recipe comes from my Carb Lover's Diet.

Dark Chocolate & Oat Clusters

Ingredients:

*Note: The recipe it calls for only makes about six, so double or triple it if you want more*
  • 2 tablespoons peanut butter
  • 2 tablespoons low fat milk
  • 1/4 cup semisweet chocolate chips
  • 3/4 cup rolled oats (I just used Quaker Oats!)

1. Heat peanut butter, milk, and chocolate chips in a saucepan over low heat 3 minutes or until chips melt. Stir continuously.
2. Stir in oats. Remove from heat.
3. With a small ice cream scoop, drop ball shapes on a wax paper-lined baking sheet. Let set in fridge for 10 minutes before serving.

These are so yummy and quick and easy.. plus HEALTHY! Try 'em out!
