Sour Cream Chicken Enchiladas!

( Also, she did not add chicken.)

Ingredients:
  • 2 cups sour cream
  • 2 chicken breasts (cooked and shredded)
  • few handfuls of shredded cheese
  • Chopped up green onions
  • 1/2 tsp. Cumin
  • 1/4 tsp. cayenne pepper (I used Buffalo Chicken Rub from Pampered Chef)
  • Tortilla
  • Enchilada Sauce
Directions:
  1. Mix first 6 ingredients in a bowl and mix up.
  2. Fry tortillas in oil for 7 seconds each side (don't crisp them up)
  3. Then move them right into the Enchilada Sauce which should be simmering in a pan next to it.
  4. Then remove and put on a cutting board. Add your sour cream mixture.
  5. Roll them and stick in a pan.
  6. Add cheese and remaining Enchilada Sauce.
  7. Stick in the oven for 20-25 minutes on 375.
  8. Enjoy!
